MSG: The Most Misunderstood Ingredient in Your Pantry

For decades, monosodium glutamate (MSG) has carried a reputation far worse than its science warrants. Yet behind the stigma lies one of the most effective, versatile, and cost-efficient flavour tools in food production.
A Brief History
MSG was discovered in 1908 by Japanese chemist Kikunae Ikeda, who noticed that broth made with kelp had a uniquely savory taste. He isolated glutamic acid-an amino acid naturally present in many foods-and combined it with sodium to create monosodium glutamate. In 1909, he patented a commercial method to produce MSG, launching the brand Ajinomoto and introducing the concept of “umami,” the fifth basic taste alongside sweet, sour, salty, and bitter.
For most of the 20th century, MSG was quietly adopted across cuisines and food industries. It became standard in soups, sauces, snacks, and processed foods. The ingredient’s reputation, however, was about to take a dramatic turn.
The Origin of MSG’s Bad Reputation
In 1968, a physician named Robert H. Man wrote a letter to The New England Journal of Medicine describing numbness and other symptoms after eating at Chinese restaurants. He speculated that MSG, alcohol, or sodium might be responsible. Media outlets quickly linked the symptoms specifically to MSG, and the term “Chinese Restaurant Syndrome” entered the public vocabulary.
This label carried deeply racist undertones. It framed an everyday ingredient in Asian cuisine as dangerous, while similar concerns about additives in Western foods were rarely dramatized in the same way. Over time, the term evolved into “MSG symptom complex,” but the negative association persisted for decades.
Compounding the problem were a series of flawed studies. Many used extremely high doses of MSG, administered it directly under the skin, or tested it in animals with compromised brain barriers-conditions that do not reflect normal human consumption. These studies fueled public fear even though they lacked scientific rigor.
Why MSG Is a Great Flavor Enhancer
Despite its reputation, MSG is scientifically robust and highly effective.
1. It Creates Umami
MSG is the purest source of umami taste. When it binds to specific taste receptors on the tongue (T1R1/T1R3), the brain interprets the signal as “savory” and protein-rich. This doesn’t add a new flavor; it deepens and rounds existing savory notes, making dishes taste more complete and satisfying.2. It Enhances Without Overshadowing
At typical usage levels (around 0.1–0.8% of a dish), MSG subtly amplifies meaty, cheesy, roasted, and brothy flavors. It does not make food taste “like MSG”; rather, it makes good-quality ingredients taste better.
3. It Reduces Sodium
MSG contains about 12% sodium, compared with 39% in table salt. Replacing part of the salt with MSG allows manufacturers and cooks to reduce overall sodium by 25–40% while maintaining or even improving perceived flavor. This is especially valuable in soups, snacks, sauces, and ready meals where sodium reduction is a public health goal.
4. It Balances Flavors
MSG can round out harsh acidic notes (citric, malic, vinegar) and soften bitter or overly sharp seasoning profiles. In fried snacks and processed meats, it interacts with fats to create a longer-lasting, creamier aftertaste, improving overall mouthfeel.
5. It Works Synergistically
When combined with nucleotides like disodium inosinate (IMP) and disodium guanylate (GMP), MSG produces a far stronger umami effect than either ingredient alone. This synergy is used in premium snacks, seasoned meats, and gourmet sauces to deliver bold, lingering flavor without excessive salt.
Other Advantages for Food Manufacturers
Beyond flavor, MSG offers practical benefits:
Cost efficiency: It is inexpensive relative to many other flavouring systems, allowing strong taste impact at low inclusion levels.
Consistency: MSG provides reliable, batch-to-batch flavour performance, critical for large-scale production.
Versatility: Effective in soups, sauces, seasonings, meats, snacks, and plant-based formulations.
Cleaner overall profiles: Because it enhances natural flavors, less reliance is needed on complex blends of artificial flavourings or excessive salt.
From a regulatory standpoint, major agencies-including the U.S. FDA, the European Food Safety Authority, and the WHO/FAO Joint Expert Committee on Food Additives-classify MSG as safe for consumption at normal levels.
Reclaiming a Maligned Ingredient
Today, chefs, food scientists, and manufacturers are increasingly reframing MSG as a legitimate, science-backed tool. The stigma is shifting as conversations move from fear to evidence: MSG is simply a purified form of glutamate, an amino acid our bodies produce and that we regularly consume in tomatoes, cheese, mushrooms, and meat.
The takeaway is clear: MSG is not a mysterious danger. It is a well-studied, highly effective flavor enhancer that can improve taste, reduce sodium, and support better overall formulation strategies. The bad reputation is largely a historical artifact of flawed science and cultural bias, not a reflection of real risk.
